When East Victoria Park’s $25 million community hub opened its doors across five venues, Barons was behind every tap. Here’s how we built one beverage system to serve a whole village.
Opened in January 2026 as part of the new Elizabeth Park precinct, Baillie Hill is one of Perth’s most ambitious hospitality projects in years. Built around a heritage-listed 1912 building in the heart of East Victoria Park, it’s a precinct designed for families, locals, and all walks of life, spanning everything from The Berwick Bar & Kitchen to Milly’s Acre and beyond.
With crowds moving through from morning coffee to evening drinks, the precinct needed beverage infrastructure that could keep up everywhere, all at once. So the team behind Baillie Hill called the team Perth trusts. We were brought in to deliver the beverage system infrastructure across the precinct, making sure each venue could deliver consistent quality, reliability and a great customer experience from day one.
What was the project?
A single hospitality precinct, but multiple distinct venues, each with their own bar, their own service demands and their own pour requirements, spread across a walkable site built around a heritage-listed structure.
The challenge was scale and complexity; integrating a beverage dispense system this large across so many areas within a heritage-listed building. The precinct needed cold, fast, consistent pours from open to close and a system that could handle peak-capacity crowds across multiple rooms simultaneously without compromising beer quality at any single tap.
What was the nature of your solution?Â
We delivered a full beverage system across the precinct, not just beer. The setup runs a 72-tap beer dispense system alongside chilled and sparkling water, and non-alcoholic lines, so every venue could pour the full range to the same standard.
But the value went well beyond the fonts. With thousands of fit-outs behind them, we looked at more than their beer systems alone. We focused on optimising the entire bar’s setup: the ergonomics, the placement of ice wells and corner sinks and how every detail can be optimised for efficiency behind the bar. Working alongside the operators and project teams, we helped engineer a system that protects beverage quality and keeps service fast, even at peak.
The result is consistency at every tap. Every pint pours at the highest quality, perfectly carbonated, and with zero waste. Whatever the staff do, the system does the work: pull the tap, let it go, close it off, charge it.

Thanks to the Cellar Control system installed by our team, Baillie Hill has reduced beer wastage by more than 2,240 litres every year. That’s the equivalent of 44 full kegs no longer going down the drain, while reducing beer line cleaning labour costs by 67%.
