Fremantle’s first urban distillery, the sleek Republic of Fremantle is located in the port city’s historical West End. Featuring a sophisticated cocktail bar and a restaurant, the distillery serves up their own local gin and vodka as well as a variety of other crisp beverages in their 100-seat bar and kitchen.
Sip on innovative cocktails out the front on gorgeous Pakenham Street or sit inside and wonder at the distillery’s state-of-the-art custom-built Müller copper pot still.
What was the client’s issue that needed fixing?
The client required a beer system that was not the centrepiece of the venue – they didn’t want to detract from their in-house distillery, but they also needed it to fit with the interior design. The client also uses a lot of sparkling water for cocktails, as well as providing chilled water for tables, so they wanted a refreshing chilled water solution that wouldn’t have ongoing rental costs. The Barons team was up for the job!
What was the nature of your solution?
We designed a 6-tap draught beer system which we installed on the back bar. We also designed and installed a chilled water system, powered by a carbonator and ice bank chiller located in the cool room to avoid using up valuable under bench space.
Anything interesting/exciting/different about the job?
The cool room was very small and required some ‘Tetris-like’ design – good thing we’re always up for a challenge! We mounted the TE-MIX25 chiller system for the water in the dead space next to the cool room blower to maximise the client’s floor space.

BARONS FACT: This chilled water solution has an RO water filtration system installed to ensure the best quality water, as Fremantle water is a lot ‘harder’ than other Perth regions.
